These Laotian larb chicken wraps are a delicious and flavorful dish made with ground chicken, fresh herbs, and a tangy lime dressing.

Ingredients

  • Red chili pepper - 1, thinly sliced
  • Roasted peanuts - 1/4 cup, chopped
  • Rice noodles - 1 cup, cooked
  • Lettuce leaves - 8
  • Fresh thai basil leaves - 1/4 cup, chopped
  • Fresh cilantro leaves - 1/2 cup, chopped
  • Fresh mint leaves - 1/2 cup, chopped
  • Red onion - 1/2 cup, thinly sliced
  • Sugar - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Ground chicken - 1 pound

Instructions

  1. In a large skillet, cook the ground chicken over medium heat until browned and cooked through.
  2. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, and sugar to make the dressing.
  3. In a large mixing bowl, combine the cooked ground chicken, red onion, mint leaves, cilantro leaves, Thai basil leaves, and rice noodles.
  4. Pour the dressing over the chicken mixture and toss to coat everything evenly.
  5. To assemble the wraps, place a lettuce leaf on a plate and spoon some of the chicken mixture onto the center of the leaf.
  6. Sprinkle with chopped peanuts and sliced red chili pepper.
  7. Fold the sides of the lettuce leaf over the filling and roll it up tightly.
  8. Repeat with the remaining lettuce leaves and chicken mixture.
  9. Serve the Laotian larb chicken wraps as an appetizer or light main course.
