Goi Tom

Goi Tom is a refreshing Vietnamese shrimp salad made with fresh vegetables, herbs, and succulent shrimp.

Ingredients

  • Thai chili - 1, thinly sliced
  • Garlic - 2 cloves, minced
  • Sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 3 tablespoons
  • Roasted peanuts - 1/4 cup, chopped
  • Fresh cilantro leaves - 1/2 cup, chopped
  • Fresh mint leaves - 1/2 cup, chopped
  • Red onion - 1/2, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque. Drain and set aside.
  2. In a large bowl, combine the cucumber, carrot, red bell pepper, red onion, mint leaves, cilantro leaves, and chopped peanuts.
  3. In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and sliced Thai chili.
  4. Add the cooked shrimp to the vegetable mixture and pour the dressing over the top. Toss well to combine.
  5. Let the salad marinate for 10-15 minutes to allow the flavors to meld together.
  6. Serve the Goi Tom salad chilled and enjoy!
