Veggie Quesadilla

These delicious veggie quesadillas are filled with a variety of colorful vegetables and melted cheese.

Ingredients

  • Salsa - For serving
  • Sour cream - For serving
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Shredded cheese - 1 cup
  • Spinach - 1 cup
  • Mushrooms - 4-5, sliced
  • Zucchini - 1/2, thinly sliced
  • Red onion - 1/2, thinly sliced
  • Bell peppers - 1, thinly sliced
  • Tortillas - 4

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add bell peppers, red onion, zucchini, and mushrooms. Cook until vegetables are tender, about 5-7 minutes.
  3. Add spinach and cook until wilted.
  4. Season with salt and pepper to taste.
  5. Remove the vegetable mixture from the skillet and set aside.
  6. Place a tortilla in the skillet and sprinkle with shredded cheese.
  7. Top with a portion of the vegetable mixture and another tortilla.
  8. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and cheese is melted.
  9. Repeat with the remaining tortillas and filling.
  10. Cut the quesadillas into wedges and serve with sour cream and salsa.
