Grilled Vegetable Quesadillas

These grilled vegetable quesadillas are packed with flavorful veggies and gooey cheese, making them a delicious and satisfying meal.

Ingredients

  • Fresh cilantro - 1/4 cup, chopped
  • Salsa - 1/2 cup
  • Sour cream - 1/2 cup
  • Cheddar cheese - 2 cups, shredded
  • Flour tortillas - 8
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Mushrooms - 8 oz, sliced
  • Red onion - 1, sliced
  • Zucchini - 1, sliced
  • Bell peppers - 2, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the sliced bell peppers, zucchini, red onion, and mushrooms with olive oil, salt, and pepper.
  3. Grill the vegetables for 5-7 minutes, or until they are tender and slightly charred.
  4. Remove the grilled vegetables from the grill and set aside.
  5. Place a tortilla on a flat surface and sprinkle one side with shredded cheddar cheese.
  6. Top with a portion of the grilled vegetables and fold the tortilla in half.
  7. Repeat with the remaining tortillas and filling.
  8. Grill the quesadillas for 2-3 minutes per side, or until the cheese is melted and the tortillas are crispy.
  9. Remove from the grill and let cool for a few minutes.
  10. Cut the quesadillas into wedges and serve with sour cream, salsa, and fresh cilantro.
