Veggie Kabobs

These delicious veggie kabobs are perfect for grilling and packed with flavor.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Mushrooms - 8, whole
  • Cherry tomatoes - 1 cup
  • Red onion - 1, cut into chunks
  • Zucchini - 2, sliced
  • Bell peppers - 2, cut into chunks

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper to make the marinade.
  3. Thread the bell peppers, zucchini, red onion, cherry tomatoes, and mushrooms onto skewers.
  4. Brush the marinade onto the veggie kabobs, making sure to coat all sides.
  5. Place the kabobs on the preheated grill and cook for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Remove the kabobs from the grill and serve hot.
