Veggie Gyro

This delicious veggie gyro is made with grilled vegetables, tzatziki sauce, and pita bread.

Ingredients

  • Red cabbage - Handful, shredded
  • Tomato - 1, sliced
  • Lettuce - Handful
  • Pita bread - 2
  • Tzatziki sauce - 1/2 cup
  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Red onion - 1, sliced
  • Yellow bell pepper - 1, sliced
  • Zucchini - 1, sliced

Instructions

  1. Preheat the grill or grill pan over medium heat.
  2. In a bowl, toss the sliced zucchini, yellow bell pepper, and red onion with olive oil, garlic powder, dried oregano, salt, and pepper.
  3. Grill the vegetables for about 5-7 minutes, or until they are tender and slightly charred.
  4. Warm the pita bread on the grill for a minute on each side.
  5. Spread tzatziki sauce on the inside of each pita bread.
  6. Fill the pita bread with grilled vegetables, lettuce, tomato, and shredded red cabbage.
  7. Fold the pita bread in half and serve immediately.
