Grilled Veggie and Feta Flatbread

This delicious grilled flatbread is topped with a medley of colorful vegetables and creamy feta cheese.

Ingredients

  • Fresh basil - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/2, thinly sliced
  • Yellow bell pepper - 1, sliced
  • Zucchini - 1 medium, sliced
  • Flatbread - 2 pieces

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, toss the zucchini, yellow bell pepper, red onion, and cherry tomatoes with olive oil, garlic powder, dried oregano, salt, and pepper.
  3. Grill the vegetables for 5-7 minutes, or until they are tender and slightly charred.
  4. Remove the vegetables from the grill and set aside.
  5. Place the flatbread on the grill and cook for 1-2 minutes on each side, until it is lightly toasted.
  6. Remove the flatbread from the grill and top with the grilled vegetables, crumbled feta cheese, and chopped fresh basil.
  7. Slice the flatbread into wedges and serve immediately.
