Vegetable Stew

A hearty and healthy vegetable stew that's packed with flavor and nutrients.

Ingredients

  • Salt and pepper - To taste
  • Thyme - 1 teaspoon
  • Bay leaf - 1
  • Vegetable broth - 4 cups
  • Tomatoes - 1 can, diced
  • Potatoes - 2, chopped
  • Celery - 2 stalks, chopped
  • Carrots - 2, chopped
  • Garlic - 3 cloves, minced
  • Onions - 2, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the carrots, celery, and potatoes and cook for another 5 minutes.
  4. Add the tomatoes, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low and simmer for 45 minutes, or until the vegetables are tender.
  6. Remove the bay leaf before serving.
