Potee de Legumes Printemps

A delicious and healthy vegetable stew made with spring vegetables.

Ingredients

  • Salt and pepper - To taste
  • Bay leaf - 1
  • Thyme - 1 teaspoon
  • Vegetable broth - 4 cups
  • Green beans - 1 cup, cut into 1-inch pieces
  • Potatoes - 2, diced
  • Celery - 2 stalks, diced
  • Carrots - 2, diced
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, celery, and potatoes and cook until the vegetables are softened, about 5 minutes.
  3. Add the green beans, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 25 minutes.
  4. Serve hot.
