Vegetable Soup

A hearty and nutritious vegetable soup packed with fresh vegetables and flavorful broth.

Ingredients

  • Salt and pepper - To taste
  • Thyme - 1 teaspoon
  • Bay leaf - 1
  • Vegetable broth - 6 cups
  • Corn - 1 cup
  • Green beans - 1 cup, cut into 1-inch pieces
  • Tomatoes - 2 medium, diced
  • Potatoes - 2 medium, diced
  • Garlic - 3 cloves, minced
  • Celery - 2 stalks, sliced
  • Carrots - 2 medium, sliced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  3. Add the potatoes, tomatoes, green beans, corn, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
  4. Reduce the heat and simmer for 20 minutes, or until the vegetables are cooked through.
  5. Remove the bay leaf before serving.
  6. Serve hot and enjoy!
