Vegan Tofu Scramble

This vegan tofu scramble is a delicious and healthy alternative to scrambled eggs. It's packed with protein and flavor!

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt and pepper - To taste
  • Spinach - 1 cup
  • Bell pepper - 1/2, diced
  • Onion - 1/2, diced
  • Garlic powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Extra firm tofu - 1 block

Instructions

  1. Drain and press the tofu to remove excess moisture.
  2. In a small bowl, mix together the turmeric, cumin, paprika, and garlic powder.
  3. Crumble the tofu into a bowl and sprinkle the spice mixture over it. Mix well to coat the tofu.
  4. Heat olive oil in a skillet over medium heat.
  5. Add the diced onion and bell pepper to the skillet and sauté until softened.
  6. Add the seasoned tofu to the skillet and cook for 5-7 minutes, stirring occasionally.
  7. Add the spinach and cook for an additional 2-3 minutes, until wilted.
  8. Season with salt and pepper to taste.
  9. Remove from heat and sprinkle nutritional yeast over the tofu scramble. Mix well.
  10. Garnish with fresh parsley and serve hot.
