Tofu Scramble

Tofu Scramble

A delicious and healthy vegan alternative to scrambled eggs. This tofu scramble is packed with protein and flavor, and can be easily customized with your favorite vegetables.

Ingredients

  • Salt and pepper - To taste
  • Nutritional yeast - 2 tablespoons
  • Turmeric - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Bell pepper - 1, diced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons
  • Firm tofu - 1 block

Instructions

  1. Drain and press the tofu to remove excess moisture.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion, bell pepper, and garlic and sauté until the vegetables are soft, about 5 minutes.
  4. Crumble the tofu into the skillet and add the turmeric, nutritional yeast, salt, and pepper.
  5. Cook, stirring frequently, for about 10-15 minutes, until the tofu is heated through and has absorbed the flavors of the other ingredients.
