Valley Harvest Muffins

These hearty muffins are packed with dried fruits, nuts, and whole grains for a wholesome and delicious treat.

Ingredients

  • Chopped nuts - 1/2 cup
  • Dried fruit mix - 1 cup
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - 1/4 cup
  • Buttermilk - 1 cup
  • Eggs - 2
  • Cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Brown sugar - 1/2 cup
  • All - purpose flour - 1 cup
  • Whole wheat flour - 1 cup

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, combine the flours, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the eggs, buttermilk, oil, and vanilla.
  4. Add the wet ingredients to the dry and stir until just combined.
  5. Fold in the dried fruit and nuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
