Blue Bottle Coffee Cake

A delicious coffee cake with a hint of Blue Bottle coffee, perfect for breakfast or dessert.

Ingredients

  • Chopped nuts - 1/2 cup
  • Cinnamon - 1 teaspoon
  • Brown sugar - 1/2 cup
  • Sour cream - 1/2 cup
  • Blue bottle coffee - 1 cup, brewed and cooled
  • Vanilla extract - 1 teaspoon
  • Eggs - 2
  • Granulated sugar - 1 cup
  • Unsalted butter - 1/2 cup, softened
  • Salt - 1/4 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch cake pan.
  2. In a medium bowl, combine the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually mix in the flour mixture, alternating with the coffee and sour cream.
  5. Pour half of the batter into the prepared pan.
  6. In a small bowl, combine the brown sugar, cinnamon, and chopped nuts. Sprinkle half of this mixture over the batter in the pan.
  7. Spread the remaining batter over the top, then sprinkle with the remaining brown sugar mixture.
  8. Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool before serving.
