Zucchini Bread

This moist and delicious zucchini bread is packed with grated zucchini, warm spices, and a hint of vanilla.

Ingredients

  • Raisins - 1/2 cup
  • Chopped walnuts - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Brown sugar - 1/2 cup
  • Granulated sugar - 1 cup
  • Vegetable oil - 1/2 cup
  • Eggs - 2
  • Nutmeg - 1/2 teaspoon
  • Cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups
  • Zucchini - 2 cups, grated

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped walnuts and raisins.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the zucchini bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
