Stumptown Coffee Cake

This delicious coffee cake is infused with Stumptown coffee for a rich, deep flavor. It's perfect for breakfast or dessert.

Ingredients

  • Chopped nuts - 1/2 cup
  • Cinnamon - 1 teaspoon
  • Brown sugar - 1/2 cup
  • Sour cream - 1 cup
  • Salt - 1/4 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups
  • Vanilla extract - 1 teaspoon
  • Eggs - 2
  • Sugar - 1 cup
  • Butter - 1/2 cup, softened
  • Stumptown coffee - 1 cup, brewed

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and coffee.
  6. Pour half of the batter into the prepared pan.
  7. In a small bowl, combine the brown sugar, cinnamon, and chopped nuts. Sprinkle half of this mixture over the batter in the pan.
  8. Pour the remaining batter over the top, then sprinkle with the remaining brown sugar mixture.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.
