Udon with Peanut Sauce

This udon noodle dish is tossed in a creamy and flavorful peanut sauce, topped with fresh vegetables and herbs.

Ingredients

  • Roasted peanuts - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Green onions - 2, thinly sliced
  • Carrot - 1, julienned
  • Bell pepper - 1, thinly sliced
  • Red pepper flakes - 1/4 teaspoon
  • Sesame oil - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Creamy peanut butter - 1/4 cup
  • Udon noodles - 8 ounces

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and red pepper flakes until well combined.
  3. In a large skillet, heat a tablespoon of oil over medium heat. Add the bell pepper and carrot, and sauté for 3-4 minutes until slightly softened.
  4. Add the cooked udon noodles to the skillet and pour the peanut sauce over them. Toss well to coat the noodles and vegetables with the sauce.
  5. Cook for an additional 2-3 minutes, stirring constantly, until the noodles are heated through.
  6. Remove from heat and garnish with sliced green onions, chopped cilantro, and roasted peanuts.
  7. Serve hot and enjoy!
