This udon noodle dish is served with a flavorful ginger sauce and topped with fresh vegetables.
Ingredients
Toasted sesame seeds - 1 tablespoon
Cilantro - 2 tablespoons, chopped
Green onions - 2, sliced
Red bell pepper - 1, thinly sliced
Carrots - 1, julienned
Vegetable broth - 1/2 cup
Honey - 1 tablespoon
Rice vinegar - 1 tablespoon
Soy sauce - 2 tablespoons
Ginger - 1 tablespoon, grated
Garlic - 2 cloves, minced
Sesame oil - 1 tablespoon
Udon noodles - 8 ounces
Instructions
Cook the udon noodles according to package instructions. Drain and set aside.
In a small saucepan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
Add the soy sauce, rice vinegar, honey, and vegetable broth to the saucepan. Stir well and simmer for 2-3 minutes.
In a large skillet, heat a bit of sesame oil over medium-high heat. Add the julienned carrots and sliced red bell pepper. Sauté for 3-4 minutes until slightly softened.
Add the cooked udon noodles to the skillet and pour the ginger sauce over them. Toss well to coat the noodles and vegetables.
Cook for an additional 2-3 minutes until everything is heated through.
Remove from heat and garnish with sliced green onions, chopped cilantro, and toasted sesame seeds.
