Udon with Duck Sauce

This delicious udon dish is made with tender duck meat and a flavorful sauce.

Ingredients

  • Lime - 1, cut into wedges
  • Cilantro - 1/4 cup, chopped
  • Bean sprouts - 1 cup
  • Green onions - 2, sliced
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Hoisin sauce - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Duck breast - 2, boneless and skinless
  • Udon noodles - 8 ounces

Instructions

  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. Season the duck breasts with salt and pepper. Heat a skillet over medium-high heat and cook the duck breasts for 4-5 minutes on each side, or until cooked to medium-rare. Remove from the skillet and let them rest for a few minutes before slicing.
  3. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, and ginger.
  4. In the same skillet used for the duck, add the sauce mixture and cook for 1-2 minutes until heated through.
  5. Add the cooked udon noodles to the skillet and toss to coat them in the sauce.
  6. Divide the udon noodles between two bowls. Top with sliced duck breast, green onions, bean sprouts, and cilantro.
  7. Serve hot with lime wedges on the side.
