Tostadas de Pollo

Tostadas de Pollo are crispy tortillas topped with shredded chicken, refried beans, lettuce, tomatoes, cheese, and salsa.

Ingredients

  • Salt and pepper - To taste
  • Lime - 1, cut into wedges
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Salsa - 1/2 cup
  • Cheese - 1 cup, shredded
  • Tomatoes - 2, diced
  • Lettuce - 1 cup, shredded
  • Refried beans - 1 cup
  • Chicken breast - 2, cooked and shredded
  • Corn tortillas - 8

Instructions

  1. Preheat the oven to 400°F.
  2. Brush both sides of the corn tortillas with oil and place them on a baking sheet.
  3. Bake for 8-10 minutes, or until crispy and golden brown.
  4. In a bowl, mix the shredded chicken with salt, pepper, and your favorite spices.
  5. Spread a layer of refried beans on each crispy tortilla.
  6. Top with the seasoned shredded chicken.
  7. Add shredded lettuce, diced tomatoes, and shredded cheese.
  8. Drizzle salsa over the toppings.
  9. Garnish with sliced avocado and chopped cilantro.
  10. Serve the tostadas de pollo with lime wedges on the side.
