Chalupa Huasteca

Chalupa Huasteca is a traditional Mexican dish made with fried tortillas, refried beans, shredded chicken, lettuce, tomatoes, cheese, and salsa.

Ingredients

  • Vegetable oil - For frying
  • Salt - To taste
  • Lime - 1, cut into wedges
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Salsa - 1/2 cup
  • Cheese - 1 cup, shredded
  • Tomatoes - 2, diced
  • Lettuce - 1 cup, shredded
  • Shredded chicken - 2 cups
  • Refried beans - 1 cup
  • Corn tortillas - 8

Instructions

  1. Heat vegetable oil in a frying pan over medium heat.
  2. Fry the corn tortillas one at a time until crispy and golden brown. Drain on paper towels.
  3. Spread a layer of refried beans on each tortilla.
  4. Top with shredded chicken, lettuce, tomatoes, cheese, salsa, avocado, and cilantro.
  5. Season with salt to taste.
  6. Serve the chalupas with lime wedges on the side.
