Tomato and Basil Pesto

This tomato and basil pesto is a delicious and versatile sauce that can be used in pasta dishes, sandwiches, or as a dip.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Olive oil - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Fresh basil leaves - 2 cups
  • Tomatoes - 2 medium, ripe

Instructions

  1. In a food processor, combine the tomatoes, basil leaves, garlic, pine nuts, and Parmesan cheese.
  2. Pulse until the ingredients are finely chopped.
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  4. Season with salt and black pepper to taste.
  5. Transfer the pesto to a jar or container and refrigerate until ready to use.
