This vibrant and flavorful pea and pine nut pesto is a delicious twist on traditional pesto.
Ingredients
Black pepper - To taste
Salt - To taste
Olive oil - 1/4 cup
Lemon juice - 1 tablespoon
Garlic - 2 cloves
Parmesan cheese - 1/4 cup, grated
Fresh basil leaves - 1 cup
Pine nuts - 1/4 cup
Frozen peas - 1 cup
Instructions
Bring a pot of water to a boil and cook the frozen peas for 2-3 minutes, until tender. Drain and set aside.
In a dry skillet, toast the pine nuts over medium heat until lightly golden and fragrant. Remove from heat and let cool.
In a food processor, combine the cooked peas, toasted pine nuts, basil leaves, grated Parmesan cheese, garlic, lemon juice, olive oil, salt, and black pepper.
Process until smooth and well combined, scraping down the sides of the processor as needed.
Taste and adjust the seasoning if needed.
Transfer the pea and pine nut pesto to a jar or container and refrigerate until ready to use.
Serve as a spread on crostini, toss with pasta, or use as a sauce for grilled vegetables.
