Pea and Pine Nut Pesto

This vibrant and flavorful pea and pine nut pesto is a delicious twist on traditional pesto.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Olive oil - 1/4 cup
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves
  • Parmesan cheese - 1/4 cup, grated
  • Fresh basil leaves - 1 cup
  • Pine nuts - 1/4 cup
  • Frozen peas - 1 cup

Instructions

  1. Bring a pot of water to a boil and cook the frozen peas for 2-3 minutes, until tender. Drain and set aside.
  2. In a dry skillet, toast the pine nuts over medium heat until lightly golden and fragrant. Remove from heat and let cool.
  3. In a food processor, combine the cooked peas, toasted pine nuts, basil leaves, grated Parmesan cheese, garlic, lemon juice, olive oil, salt, and black pepper.
  4. Process until smooth and well combined, scraping down the sides of the processor as needed.
  5. Taste and adjust the seasoning if needed.
  6. Transfer the pea and pine nut pesto to a jar or container and refrigerate until ready to use.
  7. Serve as a spread on crostini, toss with pasta, or use as a sauce for grilled vegetables.
