Tomato and Avocado Omelette

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Cheddar cheese - 1/4 cup, shredded
  • Olive oil - 1 tablespoon
  • Black pepper - To taste
  • Salt - To taste
  • Avocado - 1, sliced
  • Tomato - 1, diced
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook for 2-3 minutes, until the edges start to set.
  4. Sprinkle the diced tomatoes, avocado slices, shredded cheddar cheese, and chopped cilantro evenly over one half of the omelette.
  5. Fold the other half of the omelette over the filling and cook for another 2-3 minutes, until the cheese is melted and the omelette is cooked through.
  6. Slide the omelette onto a plate and serve hot.
