Tomato and Onion Omelette

Tomato and Onion Omelette

This delicious omelette is filled with juicy tomatoes and caramelized onions.

Ingredients

  • Fresh parsley - 1 tablespoon, chopped
  • Cheddar cheese - 1/4 cup, grated
  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Onion - 1 small, thinly sliced
  • Tomatoes - 2 medium, diced
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the sliced onion and cook until caramelized, about 5 minutes.
  4. Add the diced tomatoes to the skillet and cook for another 2 minutes.
  5. Pour the beaten eggs over the tomatoes and onions in the skillet.
  6. Cook for 3-4 minutes, or until the edges are set.
  7. Sprinkle the grated cheddar cheese on one half of the omelette.
  8. Fold the other half of the omelette over the cheese.
  9. Cook for another 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
  10. Garnish with fresh parsley and serve hot.
