Shrimp and Avocado Omelette

This delicious omelette is filled with succulent shrimp and creamy avocado, making it a perfect breakfast or brunch option.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Cheddar cheese - 1/2 cup, shredded
  • Butter - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Milk - 2 tablespoons
  • Eggs - 4
  • Avocado - 1, ripe, sliced
  • Shrimp - 8 ounces, peeled and deveined

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  2. Heat the butter in a non-stick skillet over medium heat.
  3. Add the shrimp and cook for 2-3 minutes, until pink and cooked through. Remove from the skillet and set aside.
  4. Pour the egg mixture into the skillet and cook for 2 minutes, until the edges start to set.
  5. Place the avocado slices, cooked shrimp, cheddar cheese, and fresh cilantro on one half of the omelette.
  6. Fold the other half of the omelette over the filling and cook for another 2 minutes, until the cheese is melted and the omelette is cooked through.
  7. Slide the omelette onto a plate and garnish with additional fresh cilantro, if desired.
  8. Serve hot and enjoy!
