Ingredients

  • Fresh cilantro - 1 tablespoon, chopped
  • Cheddar cheese - 1/4 cup, shredded
  • Olive oil - 1 tablespoon
  • Black pepper - To taste
  • Salt - To taste
  • Tomato - 1, diced
  • Avocado - 1, sliced
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook for 2-3 minutes, or until the edges start to set.
  4. Place the avocado slices and diced tomatoes on one half of the omelette.
  5. Sprinkle shredded cheddar cheese and chopped cilantro over the avocado and tomatoes.
