Vegetarian Tofu Scramble

A hearty and healthy vegan breakfast option that's packed with protein and veggies. This tofu scramble is a great alternative to scrambled eggs.

Ingredients

  • Salt and pepper - To taste
  • Nutritional yeast - 2 tablespoons
  • Turmeric - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Bell peppers - 2, chopped
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons
  • Firm tofu - 1 block

Instructions

  1. Drain and press the tofu to remove excess water.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion, bell peppers, and garlic and sauté until the vegetables are soft, about 5 minutes.
  4. Crumble the tofu into the skillet and add the turmeric, nutritional yeast, salt, and pepper.
  5. Cook, stirring frequently, until the tofu is heated through and the spices are well distributed, about 10 minutes.
  6. Serve hot with toast or as a filling for a breakfast burrito.
