Tofu Banh Mi

This Vietnamese-inspired sandwich is packed with marinated tofu, pickled vegetables, and fresh herbs.

Ingredients

  • Cilantro - 1/4 cup, chopped
  • Mayonnaise - 1/4 cup
  • Baguette - 1, cut into 4 pieces and halved lengthwise
  • Sugar - 1 tablespoon
  • White vinegar - 1/4 cup
  • Cucumber - 1, julienned
  • Carrot - 1, julienned
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1/4 cup
  • Extra firm tofu - 1 block, pressed and sliced

Instructions

  1. Marinate the tofu in the soy sauce, sesame oil, and garlic for at least 30 minutes.
  2. While the tofu is marinating, pickle the carrot and cucumber by combining them with the vinegar and sugar in a bowl. Let sit for at least 20 minutes.
  3. Heat a pan over medium heat and add the tofu, cooking until browned on each side, about 5 minutes total.
  4. Spread the mayonnaise on the baguette halves.
  5. Add the tofu, pickled vegetables, and cilantro to the baguette to assemble the sandwiches.
