Ingredients

  • Black pepper - 1 teaspoon
  • Salt - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 4 sprigs
  • Fresh thyme - 4 sprigs
  • Leg of lamb - 1 (about 4-5 pounds)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, combine the minced garlic, olive oil, salt, and black pepper.
  3. Rub the mixture all over the leg of lamb, ensuring it is evenly coated.
  4. Place the lamb in a roasting pan and arrange the thyme and rosemary sprigs on top.
