Ingredients

  • Black pepper - 1 teaspoon
  • Salt - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh thyme - 2 tablespoons, chopped
  • Garlic cloves - 8, minced
  • Leg of lamb - 1 (about 5 pounds)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the minced garlic, chopped thyme, olive oil, salt, and black pepper.
  3. Rub the garlic and thyme mixture all over the leg of lamb, making sure to coat it evenly.
  4. Place the lamb on a roasting rack in a roasting pan.
