Ingredients

  • Palm sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Thai chili peppers - 2, thinly sliced
  • Roasted peanuts - 1/4 cup, crushed
  • Carrots - 1/2 cup, julienned
  • Green beans - 1/2 cup, sliced
  • Cherry tomatoes - 1 cup, halved
  • Green papaya - 1 medium, shredded

Instructions

  1. In a large bowl, combine the shredded green papaya, cherry tomatoes, green beans, carrots, and Thai chili peppers.
  2. In a small bowl, whisk together the minced garlic, fish sauce, lime juice, and palm sugar until the sugar is dissolved.
  3. Pour the dressing over the papaya mixture and toss to combine.
  4. Garnish with crushed roasted peanuts.
  5. Serve immediately and enjoy!
