Ingredients

  • Fish sauce - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Roasted peanuts - 1/4 cup, crushed
  • Green beans - 1/2 cup, sliced
  • Cherry tomatoes - 1 cup, halved
  • Green papaya - 1 small, shredded

Instructions

  1. In a large bowl, combine the shredded green papaya, cherry tomatoes, green beans, roasted peanuts, cilantro, and mint leaves.
  2. In a small bowl, whisk together the lime juice, fish sauce, sugar, Thai chili peppers, and minced garlic to make the dressing.
  3. Pour the dressing over the papaya mixture and toss well to combine.
  4. Let the salad sit for 10 minutes to allow the flavors to meld together.
