This Thai beef salad is a refreshing and flavorful dish made with grilled beef, fresh vegetables, and a tangy dressing.

Ingredients

  • Red chili pepper - 1, thinly sliced
  • Garlic - 2 cloves, minced
  • Brown sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Lime - 1, juiced
  • Roasted peanuts - 1/4 cup, chopped
  • Fresh mint - 1/2 cup, chopped
  • Fresh cilantro - 1/2 cup, chopped
  • Red onion - 1/2, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, thinly sliced
  • Lettuce - 4 cups, torn
  • Beef sirloin - 1 pound, thinly sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the beef with salt and pepper, then grill for 2-3 minutes per side, or until cooked to your desired doneness. Let it rest for 5 minutes, then slice it thinly.
  3. In a large bowl, combine the lettuce, cucumber, cherry tomatoes, red onion, cilantro, and mint.
  4. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, brown sugar, garlic, and red chili pepper.
  5. Add the sliced beef to the salad bowl and pour the dressing over the top. Toss to combine.
  6. Sprinkle the chopped peanuts over the salad and serve immediately.
