Tangpyeongchae

Tangpyeongchae is a traditional Korean salad made with glass noodles, vegetables, and a tangy dressing.

Ingredients

  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Sugar - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Green onion - 2 stalks
  • Radish - 1
  • Carrot - 1
  • Cucumber - 1
  • Glass noodles - 100g

Instructions

  1. Cook the glass noodles according to the package instructions. Drain and rinse with cold water.
  2. Julienne the cucumber, carrot, and radish into thin strips.
  3. Slice the green onions into small pieces.
  4. In a large bowl, combine the cooked glass noodles, julienned vegetables, and green onions.
  5. In a separate small bowl, whisk together the soy sauce, rice vinegar, sugar, salt, and sesame oil to make the dressing.
  6. Pour the dressing over the noodle and vegetable mixture and toss well to combine.
  7. Garnish with sesame seeds.
  8. Chill in the refrigerator for at least 30 minutes before serving.
