This sushi rice bowl is a delicious and convenient way to enjoy the flavors of sushi in a bowl.
Ingredients
Green onions - 2, chopped
Sesame seeds - 1 tablespoon
Nori sheets - 2, cut into strips
Radish - 4, thinly sliced
Carrot - 1, julienned
Cucumber - 1, sliced
Avocado - 1, sliced
Sesame oil - 1 tablespoon
Soy sauce - 2 tablespoons
Salt - 1/2 teaspoon
Sugar - 1 tablespoon
Rice vinegar - 2 tablespoons
Water - 1 1/2 cups
Sushi rice - 1 cup
Instructions
Rinse the sushi rice under cold water until the water runs clear.
In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
In a small bowl, mix together the rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve the sugar.
Once the rice is cooked, transfer it to a large bowl and pour the vinegar mixture over it. Gently fold the rice to coat it with the vinegar mixture. Let it cool.
In a separate bowl, mix together the soy sauce and sesame oil.
Divide the sushi rice between two bowls. Top with avocado, cucumber, carrot, radish, nori strips, sesame seeds, and green onions.
Drizzle the soy sauce and sesame oil mixture over the rice bowls.
