Swordfish and Orange Salad

This refreshing salad combines grilled swordfish with juicy oranges and a tangy citrus dressing.

Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1/2, sliced
  • Red onion - 1/4 cup, thinly sliced
  • Mixed greens - 4 cups
  • Oranges - 2, peeled and segmented
  • Swordfish steaks - 2 (6 oz) steaks

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the swordfish steaks with salt and pepper.
  3. Grill the swordfish for 4-5 minutes per side, or until cooked through. Remove from the grill and let it rest for a few minutes.
  4. In a large bowl, combine the mixed greens, orange segments, red onion, cucumber, cherry tomatoes, and fresh parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
  6. Slice the grilled swordfish into thin strips.
  7. Add the swordfish to the salad and drizzle with the citrus dressing.
  8. Toss gently to combine all the ingredients.
  9. Serve the swordfish and orange salad immediately.
