Kiwi and Chicken Salad

This refreshing salad combines the sweetness of kiwi with the savory flavors of grilled chicken and a tangy dressing.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Avocado - 1, sliced
  • Cucumber - 1/2, sliced
  • Cherry tomatoes - 1/2 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Mixed greens - 4 cups
  • Kiwi - 2, peeled and sliced
  • Chicken breast - 2, boneless and skinless

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it into thin strips.
  4. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the dressing.
  5. In a large salad bowl, combine the mixed greens, red onion, cherry tomatoes, cucumber, and avocado.
  6. Add the sliced kiwi and grilled chicken on top.
  7. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
