Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cucumber - 1, diced
  • Cherry tomatoes - 1 cup, halved
  • Crab meat - 1 pound, cooked and flaked
  • Pasta - 8 ounces

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, crab meat, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to coat evenly.
