Swiss Chard and Roasted Tomato Tart

This delicious tart features a flaky crust filled with sautéed Swiss chard and roasted tomatoes, topped with creamy goat cheese.

Ingredients

  • Salt and pepper - To taste
  • Milk - 1/2 cup
  • Eggs - 3
  • Goat cheese - 4 ounces, crumbled
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 1 pint
  • Swiss chard - 1 bunch, stems removed and leaves chopped
  • Pie crust - 1 (store-bought or homemade)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the pie crust and press it into a tart pan. Trim any excess dough.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute.
  4. Add the Swiss chard leaves to the skillet and cook until wilted, about 5 minutes. Season with salt and pepper.
  5. In a separate baking dish, toss the cherry tomatoes with olive oil, salt, and pepper. Roast in the preheated oven for 15 minutes, or until slightly charred.
  6. Spread the sautéed Swiss chard evenly over the prepared pie crust.
  7. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the mixture over the Swiss chard.
  8. Arrange the roasted cherry tomatoes on top of the tart.
  9. Crumble the goat cheese over the tomatoes.
  10. Bake in the preheated oven for 25-30 minutes, or until the tart is set and golden brown.
  11. Allow the tart to cool for a few minutes before slicing and serving.
