Swiss Chard and Carrot Tart

This savory tart is filled with sautéed Swiss chard, carrots, and a creamy cheese mixture, all baked in a flaky pastry crust.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Parmesan cheese - 1/2 cup, grated
  • Gruyere cheese - 1 cup, grated
  • Milk - 1/2 cup
  • Eggs - 3
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Carrots - 2 large, grated
  • Swiss chard - 1 bunch, stems removed and leaves chopped
  • Pie crust - 1, store-bought or homemade

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and press it into a tart pan. Trim any excess dough.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  4. Add the chopped Swiss chard and grated carrots to the skillet. Cook until the vegetables are wilted and tender, about 5 minutes. Season with salt and pepper.
  5. In a separate bowl, whisk together the eggs and milk. Stir in the grated Gruyere cheese and Parmesan cheese.
  6. Spread the sautéed vegetables evenly over the prepared pie crust. Pour the egg and cheese mixture over the vegetables.
  7. Bake the tart in the preheated oven for 35-40 minutes, or until the filling is set and the crust is golden brown.
  8. Allow the tart to cool for a few minutes before slicing and serving.
