Swiss Chard and Mushroom Quiche

This delicious Swiss chard and mushroom quiche is packed with flavor and perfect for any meal of the day.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Grated cheese (such as gruyere or swiss) - 1 cup
  • Milk - 1 cup
  • Eggs - 4
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Mushrooms - 8 ounces, sliced
  • Swiss chard - 1 bunch, stems removed and leaves chopped
  • Pie crust - 1, store-bought or homemade

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
  3. Add the mushrooms and cook until they release their moisture and start to brown, about 8 minutes.
  4. Add the Swiss chard and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
  5. In a separate bowl, whisk together the eggs and milk. Season with salt and pepper.
  6. Place the pie crust in a 9-inch pie dish. Spread the mushroom and Swiss chard mixture evenly over the crust.
  7. Pour the egg mixture over the vegetables. Sprinkle the grated cheese on top.
  8. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.
  9. Allow the quiche to cool for a few minutes before slicing and serving.
