Ingredients

  • Salt - To taste
  • Vegetable oil - For frying
  • Bread crumbs - 1 cup
  • Eggs - 2
  • Parmesan cheese - 1/4 cup, grated
  • Mozzarella cheese - 1/2 cup, diced
  • Tomato sauce - 1 cup
  • Arborio rice - 1 cup

Instructions

  1. Cook the Arborio rice according to package instructions, then let it cool.
  2. In a large bowl, combine the cooled rice, tomato sauce, mozzarella, and Parmesan. Mix until well combined.
  3. Shape the rice mixture into oval-shaped balls, about the size of an egg.
  4. Beat the eggs in a shallow dish. Place the bread crumbs in another shallow dish.
  5. Dip each rice ball into the beaten eggs, then roll in the bread crumbs until fully coated.
  6. Heat the vegetable oil in a deep fryer or large pot to 375°F.
  7. Fry the rice balls in batches until golden brown, about 4-5 minutes. Drain on paper towels.
  8. Serve the Supplì alla Napoletana warm, sprinkled with a little extra Parmesan if desired.
