Arancini Di Riso

Arancini di Riso are deliciously plump stuffed rice balls filled with ragu, peas, mozzarella and deep fried.

Ingredients

  • Vegetable oil - For frying
  • Eggs - 2, beaten
  • Breadcrumbs - 1 cup
  • Mozzarella cheese - 1/2 cup, cubed
  • Frozen peas - 1/2 cup
  • Tomato sauce - 1 cup
  • Ground beef - 1/2 pound
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Water - 2 cups
  • Arborio rice - 1 cup

Instructions

  1. In a saucepan, bring the water to a boil. Add the rice and salt. Reduce the heat to low, cover and cook until the water is absorbed, about 20 minutes.
  2. In a skillet, heat the olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes. Add the ground beef and cook until browned, about 5 minutes. Stir in the tomato sauce and peas and cook for another 5 minutes.
  3. Let the rice and meat mixture cool. Once cool, stir in the beaten eggs.
  4. Take a small amount of the rice mixture and flatten it in your hand. Place a cube of mozzarella in the center and then shape the rice around it to form a ball. Repeat with the remaining rice and cheese.
  5. Roll the rice balls in the breadcrumbs to coat.
  6. Heat the vegetable oil in a deep fryer or large saucepan to 375°F. Fry the rice balls in batches until golden brown, about 4 minutes. Drain on paper towels.
  7. Serve the arancini hot with marinara sauce for dipping.
