Supplì al Telefono are delicious Italian rice balls filled with mozzarella and served as an appetizer.

Ingredients

  • Vegetable oil - For frying
  • Salt and pepper - To taste
  • Breadcrumbs - 1 cup
  • Eggs - 2, beaten
  • Mozzarella cheese - 1 cup, cut into small cubes
  • Tomato sauce - 1 cup
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Arborio rice - 1 cup

Instructions

  1. Cook the Arborio rice according to the package instructions, then set aside to cool.
  2. Heat the olive oil in a pan over medium heat. Add the onion and cook until soft.
  3. Add the tomato sauce to the pan and simmer for 10 minutes.
  4. Stir the cooked rice into the tomato sauce, then season with salt and pepper. Allow the mixture to cool.
  5. Take a small amount of the rice mixture and flatten it in your hand. Place a cube of mozzarella in the center, then shape the rice around the cheese to form a ball.
  6. Dip each rice ball in the beaten eggs, then roll in the breadcrumbs to coat.
  7. Heat the vegetable oil in a deep fryer or large pot to 375°F.
  8. Fry the rice balls in batches until golden brown, about 4-5 minutes. Drain on paper towels.
  9. Serve the Supplì al Telefono hot, with extra tomato sauce for dipping if desired.
