Spinach and Tomato Omelette

This delicious omelette is filled with fresh spinach, juicy tomatoes, and melted cheese.

Ingredients

  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Cheddar cheese - 1/2 cup, shredded
  • Tomatoes - 1 medium, diced
  • Spinach - 1 cup, chopped
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the chopped spinach and diced tomatoes to the skillet and cook for 2-3 minutes, until the spinach wilts and the tomatoes soften.
  4. Pour the beaten eggs over the spinach and tomatoes in the skillet.
  5. Cook for 2-3 minutes, until the edges of the omelette start to set.
  6. Sprinkle the shredded cheddar cheese evenly over the omelette.
  7. Fold the omelette in half using a spatula and cook for another 1-2 minutes, until the cheese melts and the omelette is cooked through.
  8. Slide the omelette onto a plate and serve hot.
