Artichoke and Spinach Omelette

This delicious omelette is filled with tender artichoke hearts, fresh spinach, and melted cheese.

Ingredients

  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cheddar cheese - 1/2 cup, shredded
  • Spinach - 1 cup, chopped
  • Artichoke hearts - 1 cup, chopped
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the artichoke hearts and spinach to the skillet and cook until wilted, about 3-4 minutes.
  4. Pour the beaten eggs over the vegetables in the skillet.
  5. Cook the omelette for 2-3 minutes, or until the edges are set.
  6. Sprinkle the shredded cheddar cheese over one half of the omelette.
  7. Fold the other half of the omelette over the cheese.
  8. Cook for another 2-3 minutes, or until the cheese is melted and the omelette is cooked through.
  9. Slide the omelette onto a plate and serve hot.
