Spinach and Feta Omelette

This delicious spinach and feta omelette is packed with flavor and nutrients.

Ingredients

  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Feta cheese - 1/2 cup, crumbled
  • Spinach - 2 cups, chopped
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Pour the beaten eggs over the spinach in the skillet.
  5. Cook the omelette for 2-3 minutes, or until the edges are set.
  6. Sprinkle the crumbled feta cheese evenly over one half of the omelette.
  7. Using a spatula, fold the other half of the omelette over the cheese.
  8. Cook for another 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
  9. Slide the omelette onto a plate and serve hot.
