Spinach and Feta Frittata

This delicious spinach and feta frittata is packed with flavor and makes for a satisfying breakfast or brunch option.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Milk - 1/4 cup
  • Eggs - 8
  • Feta cheese - 1 cup, crumbled
  • Spinach - 4 cups, fresh

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.
  4. Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  6. Pour the egg mixture over the spinach and onion mixture in the skillet.
  7. Sprinkle the crumbled feta cheese evenly over the top.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and golden brown on top.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
