Ingredients

  • Parmesan cheese - 1/4 cup, grated
  • Cheddar cheese - 1 cup, shredded
  • Salt and pepper - To taste
  • Milk - 1/4 cup
  • Eggs - 8
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Spinach - 2 cups, chopped
  • Mushrooms - 8 ounces, sliced
  • Olive oil - 1 tablespoon

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large oven-safe skillet over medium heat.
  3. Add the mushrooms, spinach, onion, and garlic. Cook until the mushrooms are tender and the spinach is wilted, about 5 minutes.
